**copycat** Costa Vida Green Rice

Ingredients
- 2 tablespoons lime juice
- 2 -3 garlic cloves, minced
- 1/2 cup cilantro, fresh
- 1 (2 ounce) can green chilies
- 2 teaspoons salt (may omit if using salty broth)
- 1 onion, medium
- 1 tablespoon butter
- 1 1/2 cups rice, long grain
- 3 cups chicken broth
Recipe
- 1 chop veggies/herbs coarsely and then fry in 1 t butter or oil.
- 2 add rice and stir to coat and then add broth, salt and lime juice. bring to rapid boil, turn down as low as possible, cover and simmer about 20 minutes - do not stir! fluff with fork.
