Amber's Banana Muffins

Total Time: 40 mins Preparation Time: 15 mins Cook Time: 25 mins

Ingredients

  • 5 medium eggs
  • 2 tablespoons flax seeds
  • 5 tablespoons skim milk
  • 2 teaspoons vanilla extract
  • 4 tablespoons agave
  • 5 really ripe bananas
  • 1/2 cup butter, softened
  • 1/2 cup raisins
  • 1/4 teaspoon sea salt
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 cup almond meal
  • 3/4 cup oat flour
  • 2 cups all-purpose flour

Recipe

  • 1 soak raisins over night, drain excess water & puree.
  • 2 preheat oven to 350.
  • 3 add bananas and flax to the raisins and puree.
  • 4 transfer banana mixture to a mixing bowl and add milk, vanilla, agave, butter, & eggs - using a mixer on med/low speed for 1 minute (until combined).
  • 5 in a separate bowl mix salt, baking soda, baking powder, almond meal, oat flour, & all purpose flour.
  • 6 slowly mix the dry ingrediants inches mix until wet on low then med for 1 minute.
  • 7 portion out into 36 greased or lined muffin cups.
  • 8 bake for 20-30 min or until toothpick inserted comes out clean.
