Amber's Banana Muffins

Ingredients
- 5 medium eggs
- 2 tablespoons flax seeds
- 5 tablespoons skim milk
- 2 teaspoons vanilla extract
- 4 tablespoons agave
- 5 really ripe bananas
- 1/2 cup butter, softened
- 1/2 cup raisins
- 1/4 teaspoon sea salt
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1 cup almond meal
- 3/4 cup oat flour
- 2 cups all-purpose flour
Recipe
- 1 soak raisins over night, drain excess water & puree.
- 2 preheat oven to 350.
- 3 add bananas and flax to the raisins and puree.
- 4 transfer banana mixture to a mixing bowl and add milk, vanilla, agave, butter, & eggs - using a mixer on med/low speed for 1 minute (until combined).
- 5 in a separate bowl mix salt, baking soda, baking powder, almond meal, oat flour, & all purpose flour.
- 6 slowly mix the dry ingrediants inches mix until wet on low then med for 1 minute.
- 7 portion out into 36 greased or lined muffin cups.
- 8 bake for 20-30 min or until toothpick inserted comes out clean.
