Butternut Squash & Apples

Total Time: 1 hr Preparation Time: 15 mins Cook Time: 45 mins

Ingredients

  • 1 1/2 lbs butternut squash
  • 1 large apple
  • 3 tablespoons butter
  • 2 tablespoons sugar, free maple syrup. you can use real maple syrup. because of diet restrictions i used the sugar free- (splenda)
  • pecan halves (to garnish)

Recipe

  • 1 spray a glass baking dish with pam or similar product.
  • 2 preheat oven to 400 degrees.
  • 3 cut the squah in half, peel & scoop out pulp and seeds.
  • 4 cut into half inch slices. arrange in a glass baking dish.
  • 5 core the apple (peel if desired) and cut into half inch slices. place on top of the squash.
  • 6 melt butter, add syrup and drizzle over the squash & apple.
  • 7 cover tightly with aluminum foil.
  • 8 bake at 400 degrees for about 45-50 minutes, or until the squash is tender.
