Cheese Stuffed Artichokes

Total Time: 55 mins Preparation Time: 35 mins Cook Time: 20 mins

Ingredients

  • Servings: 8
  • 8 artichokes
  • 4 tablespoons butter
  • 2 tablespoons all-purpose flour
  • 1/2 cup milk
  • 1/2 teaspoon crushed tarragon
  • 3/4 cup grated cheddar cheese
  • 3 egg yolks
  • 3 egg whites, stiffly beaten

Recipe

  • 1 wash artichokes, cut tips of leaves off, remove thistle with teaspoon and reserve artichokes.
  • 2 melt butter in a saucepan.
  • 3 whisk in flour and continue until flour is completely absorbed.
  • 4 stir in milk.
  • 5 whisk in tarragon and cheese.
  • 6 blend in egg yolks.
  • 7 fold beaten egg whites into mixture and spoon into artichokes filling each one.
  • 8 place the artichokes in a buttered baking dish and bake at 375 deg.
  • 9 for 20-25 minutes, or until puffed.
  • 10 serve immediately.
