Australian Jack

Total Time: 55 mins Preparation Time: 20 mins Cook Time: 35 mins

Ingredients

  • 2 teaspoons water
  • 1 1/2 cups oatmeal
  • 1 teaspoon ginger powder
  • 1/4 lb butter (unsalted)
  • 1/3 cup dark brown sugar
  • 1/4 teaspoon baking soda

Recipe

  • 1 cream the butter; add the sugar and beat until light and fluffy.
  • 2 dissolve the baking soda in the water and add, stirring well.
  • 3 add the oatmeal and ginger, mixing well. the mixture should be fairly firm. if necessary, add a little more oatmeal.
  • 4 knead lightly on a floured surface.
  • 5 preheat oven to 300 degrees.
  • 6 press the mixture in a buttered baking dish, about 8 x 12 inches. the dough should be about 1/2 inch thick.
  • 7 bake in the 300 degree oven for 35 minutes, or until brown on top.
  • 8 cut into squares while hot.
