Ingredients
- 2 teaspoons water
- 1 1/2 cups oatmeal
- 1 teaspoon ginger powder
- 1/4 lb butter (unsalted)
- 1/3 cup dark brown sugar
- 1/4 teaspoon baking soda
Recipe
- 1 cream the butter; add the sugar and beat until light and fluffy.
- 2 dissolve the baking soda in the water and add, stirring well.
- 3 add the oatmeal and ginger, mixing well. the mixture should be fairly firm. if necessary, add a little more oatmeal.
- 4 knead lightly on a floured surface.
- 5 preheat oven to 300 degrees.
- 6 press the mixture in a buttered baking dish, about 8 x 12 inches. the dough should be about 1/2 inch thick.
- 7 bake in the 300 degree oven for 35 minutes, or until brown on top.
- 8 cut into squares while hot.
