Blueberry Muffins

Total Time: 35 mins Preparation Time: 10 mins Cook Time: 25 mins

Ingredients

  • 1 3/4 cups flour
  • 1/3 cup sugar
  • 2 1/2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 cup fresh blueberries or 1 cup unthawed frozen blueberries
  • 1 egg
  • 1/2 teaspoon lemon juice
  • 1/3 cup butter, melted
  • 1/3 cup butter or 1/3 cup margarine, melted

Recipe

  • 1 in a large bowl, combine the flour, sugar, baking powder and salt.
  • 2 stir in blueberries.
  • 3 add milk, egg, lemon juice and butter.
  • 4 mix just until dry ingredients are moistened.
  • 5 the batter will be lumpy (do not over mix).
  • 6 spoon batter into twelve 2 1/2 inch greased muffin cups.
  • 7 preheat oven to 400 degrees.
  • 8 bake for 25 minutes or until tops spring back when lightly touched.
  • 9 serve warm.
