Blueberry Muffins

Ingredients
- 1 3/4 cups flour
- 1/3 cup sugar
- 2 1/2 teaspoons baking powder
- 1/2 teaspoon salt
- 1 cup fresh blueberries or 1 cup unthawed frozen blueberries
- 1 egg
- 1/2 teaspoon lemon juice
- 1/3 cup butter, melted
- 1/3 cup butter or 1/3 cup margarine, melted
Recipe
- 1 in a large bowl, combine the flour, sugar, baking powder and salt.
- 2 stir in blueberries.
- 3 add milk, egg, lemon juice and butter.
- 4 mix just until dry ingredients are moistened.
- 5 the batter will be lumpy (do not over mix).
- 6 spoon batter into twelve 2 1/2 inch greased muffin cups.
- 7 preheat oven to 400 degrees.
- 8 bake for 25 minutes or until tops spring back when lightly touched.
- 9 serve warm.
