Brown Rice And Carrot Pilaf

Total Time: 1 hr 5 mins Preparation Time: 10 mins Cook Time: 55 mins

Ingredients

  • Servings: 6
  • 3 tablespoons butter or 3 tablespoons margarine
  • 1 large onion, finely chopped
  • 1 cup carrot, coarsely grated
  • 1 cup long grain brown rice
  • 2 1/2 cups vegetable stock
  • salt and pepper
  • 1/2 cup parsley, chopped
  • 2 cups bean sprouts (optional)

Recipe

  • 1 melt butter in a 2 quart pan at med-high heat.
  • 2 add onion and carrot and cook about 5 minutes.
  • 3 stir in rice and cook until rice browns slightly.
  • 4 add stock and seasonings.
  • 5 cover and simmer until rice is tender, about 45 minutes.
  • 6 stir in parsley and sprouts just before serving.
