Brown Rice And Carrot Pilaf

Ingredients
- Servings: 6
- 3 tablespoons butter or 3 tablespoons margarine
- 1 large onion, finely chopped
- 1 cup carrot, coarsely grated
- 1 cup long grain brown rice
- 2 1/2 cups vegetable stock
- salt and pepper
- 1/2 cup parsley, chopped
- 2 cups bean sprouts (optional)
Recipe
- 1 melt butter in a 2 quart pan at med-high heat.
- 2 add onion and carrot and cook about 5 minutes.
- 3 stir in rice and cook until rice browns slightly.
- 4 add stock and seasonings.
- 5 cover and simmer until rice is tender, about 45 minutes.
- 6 stir in parsley and sprouts just before serving.
