Cajun Style Lamb

Ingredients

- 4 lamb chops, thick and boneless
- 1 teaspoon salt
- 1/4 teaspoon cayenne pepper
- 2 tablespoons butter
- 1/2 cup onion, finely chopped
- 2 garlic cloves, minced
- 1 bay leaf
- 1 teaspoon paprika
- 1/2 teaspoon black pepper
- 1/2 teaspoon dried thyme
- 1/2 cup chicken broth
- 1/2 cup wine
- 3/4 cup sour cream
- salt and pepper
Recipe
- 1 in a large skillet, brown lamb shops on both sides in a little of the butter. sprinkle with salt and cayenne pepper. remove from skillet and set aside.
- 2 add remaining butter to skillet. add chopped onion and garlic. saute for a few minutes until soft, but not browned.
- 3 add bay leaf, paprika, black pepper and thyme leaves. stir to combine. add chicken broth and wine.
- 4 heat to simmer.
- 5 return lamb chops to skillet. simmer, covered, over medium heat for about 20 minutes.
- 6 remove chops.
- 7 add sour cream to sauce in pan. stir. heat slowly, stirring. season with salt and pepper to taste.
- 8 pour sauce over lamb. service with steamed rice and broccoli.
