Basic Cheddar Sauce

Ingredients
- Servings: 4
- 2 tablespoons butter
- 2 tablespoons flour
- 1 1/2 cups skim milk
- 2 ounces cheddar cheese, grated
- salt and pepper
- 1/4 teaspoon dried mustard
Recipe
- 1 melt butter in small sauce pan until it stops bubbling. add the flour, stir until fully incorporated. cook over medium heat until the roux browns slightly.
- 2 add the milk slowly while whisking continually. cook and stir over medium high heat until the sauce bubbles, then remove from heat.
- 3 add the cheese & mustard powder, stir gently until the cheese melts and incorporates completely. season to taste.
