Butter Mochi

Total Time: 1 hr 35 mins Preparation Time: 15 mins Cook Time: 1 hr 20 mins

Ingredients

  • Servings: 32
  • 4 cups rice powder (mochiko powder)
  • 2 3/4 cups granulated sugar
  • 3 tablespoons baking powder
  • 4 cups whole milk
  • 4 eggs, beaten
  • 1/4 lb butter, melted
  • 2 tablespoons pure vanilla extract
  • 1/2-1 tablespoon butter, to grease pan

Recipe

  • 1 pre-heat oven to 350 degrees.
  • 2 in a large mixing bowl, blend together the dry ingredients.
  • 3 in a separate bowl, blend all wet ingredients until well combined.
  • 4 add the dry ingredients to the wet in small amounts.
  • 5 stir until well incorporated and continue adding the dry ingredients until all has been absorbed.
  • 6 pour mixture in one 9" x 13" or two 8" x 8" buttered pan (s).
  • 7 bake for 1 hour 20 minutes.
  • 8 test with toothpick - comes out clean when done.
  • 9 let cool before cutting.
  • 10 yield will differ according to the size of the pieces -- suggest cutting in squares or 1"x2" rectangles-- it is rich.
