Bread And Butter Pickles

Total Time: 3 hrs 10 mins Preparation Time: 3 hrs Cook Time: 10 mins

Ingredients

  • 4 quarts cucumbers, sliced
  • 6 onions, sliced
  • 1 green pepper
  • 1 sweet red pepper
  • 3 garlic cloves
  • 1/3 cup salt
  • 1 1/2 teaspoons turmeric
  • 1 1/2 teaspoons celery seeds
  • 2 tablespoons mustard seeds
  • 5 cups vinegar
  • 6 cups sugar
  • 2 cups water, frozen in ice cube trays

Recipe

  • 1 wash cukes but do not peel. slice thin.
  • 2 add sliced onions, peppers cut in narrow strips; add garlic cloves, sprinkle the salt over the layers as you work.
  • 3 now mix a tray of ice cubes through the pickles, put another full tray on top. let stand 3 hours.
  • 4 drain cucumber mixture thoroughly and discard ice.
  • 5 combine vinegar sugar and spices. pour over cucumber slices.
  • 6 heat to boiling point. pour in hot sterilized jars and seal in boiling water bath. age before using. yield 6-7 pints.
