Caramel Pecan Fudge

Total Time: 2 hrs Preparation Time: 1 hr Cook Time: 1 hr

Ingredients

  • 3 cups sugar
  • 1 cup milk
  • 5 tablespoons butter
  • 1 quart whole pecans
  • 1 teaspoon vanilla

Recipe

  • 1 butter a 9x9 baking pan.
  • 2 in a large saucepan, mix 1 cup of milk and 2 cups sugar. set aside.
  • 3 slowly melt one cup sugar in a small heavy saucepan stirring constantly.
  • 4 pour the caramelized sugar in the milk/sugar mixture.
  • 5 over medium heat, stir until the caramelized sugar is dissolved.
  • 6 when the mixture starts to boil, add the butter.
  • 7 cook to the soft-ball stage.
  • 8 add the pecans and vanilla, remove from heat and beat until creamy.
  • 9 set in cold water, when the mixture starts to stick to the pot and is thick, pour into the buttered 9x9 pan.
  • 10 let cool, cut and enjoy.
