Cheese Scalloped Baby Carrots

Ingredients
- Servings: 4
- 5 cups sliced raw baby carrots
- 1 cup chopped onion
- 1/2 cup butter
- 1/2 lb velveeta cheese, grated
- 12 ritz crackers, crushed
Recipe
- 1 boil carrots til done, drain. saute onion in butter til softened.
- 2 in small baking dish, layer half of carrots, then half of cheese, repeat.
- 3 pour onions and butter over top. sprinkle with crushed ritz crackers.
- 4 bake at 350º, uncovered, for 30-40 minutes or til carrots are tender.
