Cheese Scalloped Baby Carrots

Total Time: 1 hr Preparation Time: 20 mins Cook Time: 40 mins

Ingredients

  • Servings: 4
  • 5 cups sliced raw baby carrots
  • 1 cup chopped onion
  • 1/2 cup butter
  • 1/2 lb velveeta cheese, grated
  • 12 ritz crackers, crushed

Recipe

  • 1 boil carrots til done, drain. saute onion in butter til softened.
  • 2 in small baking dish, layer half of carrots, then half of cheese, repeat.
  • 3 pour onions and butter over top. sprinkle with crushed ritz crackers.
  • 4 bake at 350º, uncovered, for 30-40 minutes or til carrots are tender.
