Brown Sugar-banana Muffins

Ingredients
- 1/2 cup butter, softened
- 1 cup brown sugar, firmly packed
- 2 eggs, large
- 1 cup mashed banana, about 2 large
- 1/2 cup buttermilk
- 1 teaspoon vanilla extract
- 2 1/4 cups flour
- 3/4 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1/2 teaspoon salt
- 1/2 cup pecans, chopped-toasted- (optional)
Recipe
- 1 beat butter at medium speed until creamy. gradually add brown sugar, beating until light and fluffy.
- 2 add eggs, 1 at a time, beating just until blended after each addition.
- 3 stir together mashed bananas, buttermilk, and vanilla.
- 4 stir together flour and next 3 ingredients; add to butter mixture alternately with banana mixture, beginning and ending with flour mixture.
- 5 beat at low speed just until blended after each addition. (do not overbeat).
- 6 spoon batter into 12 lightly greased muffin cups, filling two-thirds full. sprinkle evenly with pecans.
- 7 bake at 350 for 20 to 25 minutes or until wooden pick inserted in center comes out clean.
- 8 remove from pans immediately and cool 10 minutes on wire rack.
