Autumn Brussels Sprouts

Ingredients

- 3 cups halved brussels sprouts
- 1 tablespoon butter or 1 tablespoon margarine
- 1 cup chopped peeled apple
- 1/2 cup chopped onion
- 1/2 cup chopped cooked chestnuts
- 1/2 cup vegetable broth
- salt, to taste
- pepper, to taste
Recipe
- 1 cook the brussels sprouts in boiling water to desired doneness; drain.
- 2 in a big skillet, melt the butter over med-high heat.
- 3 add in apples and onions; cook, stirring until softened, about 4 minutes.
- 4 add in brussels sprouts, chestnuts, broth, salt, and pepper; cook, stirring, until most of the broth has evaporated, about 3 minutes.
- 5 variation--may use apple juice instead of vegetable broth.
