Autumn Brussels Sprouts

Total Time: 1 hr 5 mins Preparation Time: 45 mins Cook Time: 20 mins

Ingredients

  • Servings: 4
  • 3 cups halved brussels sprouts
  • 1 tablespoon butter or 1 tablespoon margarine
  • 1 cup chopped peeled apple
  • 1/2 cup chopped onion
  • 1/2 cup chopped cooked chestnuts
  • 1/2 cup vegetable broth
  • salt, to taste
  • pepper, to taste

Recipe

  • 1 cook the brussels sprouts in boiling water to desired doneness; drain.
  • 2 in a big skillet, melt the butter over med-high heat.
  • 3 add in apples and onions; cook, stirring until softened, about 4 minutes.
  • 4 add in brussels sprouts, chestnuts, broth, salt, and pepper; cook, stirring, until most of the broth has evaporated, about 3 minutes.
  • 5 variation--may use apple juice instead of vegetable broth.
