Blue Corn Madelines

Total Time: 22 mins Preparation Time: 10 mins Cook Time: 12 mins

Ingredients

  • 1 cup blue cornmeal (or yellow cornmeal)
  • 1 cup flour
  • 5 tablespoons sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 cup milk
  • 1 egg, beaten to blend
  • 5 tablespoons butter, melted

Recipe

  • 1 preheat oven to 350°f.
  • 2 butter madeleine molds and set aside.
  • 3 in a large bowl whisk together the dry ingredients (cornmeal - salt).
  • 4 stir in milk, egg and butter.
  • 5 working in batching and cooling molds between batches, spoon 1 tablespoon batter into each prepared madeleine mold.
  • 6 bake for 12-15 minutes or until madeleine is golden brown on the bottom.
  • 7 turn out onto rack to cool completely.
