Blueberry-onion Sauced Lamb Tenderloin

Total Time: 50 mins Preparation Time: 10 mins Cook Time: 40 mins

Ingredients

  • Servings: 4
  • 3/4-1 lb lamb tenderloin
  • 2 tablespoons butter, divided
  • 2 medium onions, sliced
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 2 tablespoons sugar
  • 1/4 cup port wine or 1/4 cup sweet sherry
  • 2 tablespoons balsamic vinegar
  • 1 cup fresh blueberries or 1 cup frozen blueberries
  • 1 cup chopped cherry tomatoes

Recipe

  • 1 preheat broiler.
  • 2 broil lamb, turning occasionally until cooked through, about 20 minutes.
  • 3 remove to a platter; cover to keep warm.
  • 4 meanwhile, in a large skillet over medium-high heat, melt 2 tablespoons of the butter.
  • 5 add onions, salt and pepper; cook until onions are golden, about 10 minutes.
  • 6 add sugar; cook until onions are caramelized, 3 minutes longer.
  • 7 add port, balsamic, blueberries and tomatoes and bring to a boil.
  • 8 remove from heat.
  • 9 thinly slice lamb and serve with sauce.
