Blazing Chicken

Total Time: 1 hr 10 mins Preparation Time: 5 mins Cook Time: 1 hr 5 mins

Ingredients

  • Servings: 4
  • 3/4 cup butter
  • 1 roasting chicken, 3 lb
  • 1/3 cup brandy
  • 1/3 cup port wine
  • 1 tablespoon flour
  • 1 1/2 cups heavy cream, warmed
  • salt and pepper

Recipe

  • 1 preheat oven to 350*. lightly butter baking dish and put the rest of the butter in the chicken. bake @ 350* for 35 minutes, turning the chicken over a few times. remove from oven.
  • 2 pour brandy over the chicken and light it. when it's burning brightly, put out the blaze with port. return chicken to oven and bake 30 minutes longer. remove chicken and keep warm.
  • 3 put baking dish over medium heat and stir in flour, cooking about a minute to remove that raw flour taste. add cream, stir, season to taste. pour over chicken.
