Cape Cod Cranberry Pie

Ingredients

  • Servings: 8
  • 2 1/2 cups cranberries, fresh or frozen and thawed
  • 1/2 cup sugar
  • 3/4 cup chopped pecans
  • 2 eggs
  • 1 cup sugar
  • 1 cup flour
  • 1/2 cup butter, melted
  • 1/4 cup shortening, melted

Recipe

  • 1 grease a 10-inch pie plate.
  • 2 add cranberries and spread out evenly.
  • 3 top cranberries with 1/2 cup sugar and pecans.
  • 4 in a mixing bowl, add the eggs.
  • 5 gradually beat in 1 cup of sugar.
  • 6 add the flour, butter, and shortening, beating until just smooth.
  • 7 pour the batter over the cranberries.
  • 8 bake at 325 degrees for 1 hour or until the top is golden.
  • 9 serve warm with ice cream.
