Black Raspberry Muffins

Total Time: 40 mins Preparation Time: 15 mins Cook Time: 25 mins

Ingredients

  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup sugar
  • 1/4 cup egg substitute
  • 1/2 cup low-fat milk
  • 1/4 cup prune puree or 1/4 cup prune baby food
  • 1 cup frozen black raspberries, partially thawed

Recipe

  • 1 preheat oven to 375 degrees.
  • 2 butter 12 muffin tins or line with paper muffin liners.
  • 3 set aside 1/4 cup flour.
  • 4 combine remaining flour, baking powder, salt and sugar in a mixing bowl.
  • 5 stir in remaining ingredients, except berries, just enough to dampen flour.
  • 6 do not overmix.
  • 7 mixture should be lumpy.
  • 8 sprinkle reserved flour over berries and gently stir into batter.
  • 9 fill each muffin tin 2/3 full.
  • 10 bake 25 minutes or until tester comes out clean.
