Black Raspberry Muffins

Ingredients
- 2 cups all-purpose flour
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1/2 cup sugar
- 1/4 cup egg substitute
- 1/2 cup low-fat milk
- 1/4 cup prune puree or 1/4 cup prune baby food
- 1 cup frozen black raspberries, partially thawed
Recipe
- 1 preheat oven to 375 degrees.
- 2 butter 12 muffin tins or line with paper muffin liners.
- 3 set aside 1/4 cup flour.
- 4 combine remaining flour, baking powder, salt and sugar in a mixing bowl.
- 5 stir in remaining ingredients, except berries, just enough to dampen flour.
- 6 do not overmix.
- 7 mixture should be lumpy.
- 8 sprinkle reserved flour over berries and gently stir into batter.
- 9 fill each muffin tin 2/3 full.
- 10 bake 25 minutes or until tester comes out clean.
