Cheese Rarebit

Total Time: 55 mins Preparation Time: 10 mins Cook Time: 45 mins

Ingredients

  • Servings: 6
  • 1/4 cup butter or 1/4 cup margarine
  • 1/4 cup all-purpose flour
  • 2 cups milk
  • 3 cups shredded cheddar cheese
  • 1/4 teaspoon salt
  • 1/4 teaspoon dry mustard
  • 1/8 teaspoon paprika
  • 1 egg, beaten
  • toast points

Recipe

  • 1 melt butter in a heavy saucepan over low heat.
  • 2 add flour, stirring until smooth.
  • 3 cook 1 minute, stirring constantly.
  • 4 gradually add milk; cook over medium heat, stirring constantly until mixture is thickened and bubbly.
  • 5 stir in cheddar cheese, salt, dry mustard, and paprika.
  • 6 gradually stir approx one-fourth of hot mixture into beaten egg; add to remaining hot mixture.
  • 7 cook mixture over low heat 1 minute.
  • 8 serve over toast points.
