Cheese Rarebit

Ingredients

- 1/4 cup butter or 1/4 cup margarine
- 1/4 cup all-purpose flour
- 2 cups milk
- 3 cups shredded cheddar cheese
- 1/4 teaspoon salt
- 1/4 teaspoon dry mustard
- 1/8 teaspoon paprika
- 1 egg, beaten

Recipe
- 1 melt butter in a heavy saucepan over low heat.
- 2 add flour, stirring until smooth.
- 3 cook 1 minute, stirring constantly.
- 4 gradually add milk; cook over medium heat, stirring constantly until mixture is thickened and bubbly.
- 5 stir in cheddar cheese, salt, dry mustard, and paprika.
- 6 gradually stir approx one-fourth of hot mixture into beaten egg; add to remaining hot mixture.
- 7 cook mixture over low heat 1 minute.
- 8 serve over toast points.
