Cheese Souffle

Total Time: 45 mins Preparation Time: 20 mins Cook Time: 25 mins

Ingredients

  • Servings: 6
  • 3 1/2 tablespoons butter
  • 4 tablespoons flour
  • 1 1/2 cups milk
  • 6 egg yolks
  • 8 egg whites
  • 1 pinch salt
  • 1/8 teaspoon cream of tartar
  • 1 cup grated cheese (any kind)
  • 1 teaspoon prepared mustard
  • 1 pinch nutmeg
  • 1 dash cayenne pepper

Recipe

  • 1 preheat oven to 400 degrees.
  • 2 melt the butter and add the flour. stir in the milk gradually. remove the pan from the heat and add the egg yolks one at a time.
  • 3 stir in the cheese, mustard, nutmeg and pepper. add a pinch of salt and 1/8 teaspoons cream of tarter to the egg whites and beat until stiff.
  • 4 fold the cheese mixture into the egg whites and transfer to the prepared souffle dish.
  • 5 place the souffle in the oven and immediately reduce the heat to 375° degrees.
  • 6 bake 25 minutes.
