Cheese Souffle

Ingredients
- Servings: 6
- 3 1/2 tablespoons butter
- 4 tablespoons flour
- 1 1/2 cups milk
- 6 egg yolks
- 8 egg whites
- 1 pinch salt
- 1/8 teaspoon cream of tartar
- 1 cup grated cheese (any kind)
- 1 teaspoon prepared mustard
- 1 pinch nutmeg
- 1 dash cayenne pepper
Recipe
- 1 preheat oven to 400 degrees.
- 2 melt the butter and add the flour. stir in the milk gradually. remove the pan from the heat and add the egg yolks one at a time.
- 3 stir in the cheese, mustard, nutmeg and pepper. add a pinch of salt and 1/8 teaspoons cream of tarter to the egg whites and beat until stiff.
- 4 fold the cheese mixture into the egg whites and transfer to the prepared souffle dish.
- 5 place the souffle in the oven and immediately reduce the heat to 375° degrees.
- 6 bake 25 minutes.
