Banana Flan

Ingredients

- 200 g organic all-purpose flour
- 25 g splenda sugar blend for baking
- 125 g margarine
- 1 pinch salt
- 4 tablespoons water
- 500 ml skim milk
- 30 ml vanilla
- 50 g splenda sugar blend for baking
- 2 eggs
- 3 medium bananas
Recipe
- 1 sugar pastry:.
- 2 mix flour and salt.
- 3 add butter. mix using your hands.
- 4 add sugar and 4 tbsp of water.
- 5 mix very well.
- 6 roll into a ball and wrap in cling wrap and chill for 20 minutes.
- 7 pastry cream:.
- 8 combine milk and vanilla and heat in stove.

- 10 in a medium bowl, mix sugar and eggs with a wooden spoon till yellowish in color.
- 11 when milk mixture is boiling, turn off the heat. let it cool for a few minutes.
- 12 then gradually add the milk mixture to the egg mixture.

- 14 mix well with wooden spoon.
- 15 put it back on the sauce pan and heat it again.
- 16 stir well until mixture becomes thick.

- 18 after chilling the dough, knead it using 2 baking sheets.
- 19 roll the dough and put in pie plate.
- 20 put parchment paper on top and chill again for 5 minutes.
- 21 take out dough from the ref and place mongo beans as weights.
- 22 bake in the oven 200°c for 20-25 minutes.
- 23 take out in the oven, remove the mongo beans and parchment paper.
- 24 heat again till golden brown.
- 25 once cooked, assemble the pastry cream on top of the dough using pastry bag.
- 26 then place the sliced bananas on top of pastry cream as toppings.
