Brown Sugar-glazed Carrots

Ingredients

- 2 lbs carrots (6 to 7 medium)
- 1/2 teaspoon salt, if desired
- 2/3 cup packed brown sugar
- 1/4 cup margarine or 1/4 cup butter
- 1 teaspoon grated orange peel
- 1/2 teaspoon salt
Recipe
- 1 peel the carrots, and cut into 1/4-inch slices.
- 2 heat 1 inch water to boiling in the saucepan over high heat.
- 3 add the 1/4 teaspoon salt if desired.
- 4 add the carrot slices.
- 5 cover and heat to boiling again.
- 6 reduce heat just enough so water bubbles gently.
- 7 cook covered 12 to 15 minutes or until carrots are tender when pierced with a fork.
- 8 while carrots are cooking, heat the brown sugar, margarine, orange peel.
- 9 and 1/2 teaspoon salt in the skillet over medium heat, stirring.
- 10 constantly, until sugar is dissolved and mixture is bubbly.
- 11 be careful not to overcook or the mixture will taste scorched.
- 12 remove the skillet from the heat.
- 13 drain carrots in a strainer, then stir them into the brown sugar mixture.
- 14 cook over low heat about 5 minutes, stirring occasionally and gently,.
- 15 until carrots are glazed and hot.
