Brown Sugar-glazed Carrots

Total Time: 35 mins Preparation Time: 15 mins Cook Time: 20 mins

Ingredients

  • Servings: 6
  • 2 lbs carrots (6 to 7 medium)
  • 1/2 teaspoon salt, if desired
  • 2/3 cup packed brown sugar
  • 1/4 cup margarine or 1/4 cup butter
  • 1 teaspoon grated orange peel
  • 1/2 teaspoon salt

Recipe

  • 1 peel the carrots, and cut into 1/4-inch slices.
  • 2 heat 1 inch water to boiling in the saucepan over high heat.
  • 3 add the 1/4 teaspoon salt if desired.
  • 4 add the carrot slices.
  • 5 cover and heat to boiling again.
  • 6 reduce heat just enough so water bubbles gently.
  • 7 cook covered 12 to 15 minutes or until carrots are tender when pierced with a fork.
  • 8 while carrots are cooking, heat the brown sugar, margarine, orange peel.
  • 9 and 1/2 teaspoon salt in the skillet over medium heat, stirring.
  • 10 constantly, until sugar is dissolved and mixture is bubbly.
  • 11 be careful not to overcook or the mixture will taste scorched.
  • 12 remove the skillet from the heat.
  • 13 drain carrots in a strainer, then stir them into the brown sugar mixture.
  • 14 cook over low heat about 5 minutes, stirring occasionally and gently,.
  • 15 until carrots are glazed and hot.
