Berry Mini Loaves

Total Time: 35 mins Preparation Time: 10 mins Cook Time: 25 mins

Ingredients

  • 1/2 cup butter, softened
  • 1 cup sugar
  • 2 eggs
  • 3 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 1 cup buttermilk
  • 1 cup whole berry cranberry sauce
  • 1 cup blueberries (fresh or frozen)

Recipe

  • 1 in a mixing bowl, cream the butter and sugar together. add the eggs one at a time, beating well after each addition.
  • 2 combine the dry ingredients together with a whisk. add the dry ingredients to the creamed mixture alternately with the buttermilk, beginning and ending with the dry ingredients.
  • 3 stir in cranberry sauce and blueberries by hand.
  • 4 pour into four greased mini loaf pans (approximately 5 3/4"x3"x2").
  • 5 bake at 350f for 25-30 minutes or until bread passes a toothpick test.
  • 6 cool for 10 minutes before removing from pans and cooling completely on a wire rack.
