Breast Of Chicken Paprika In Champagne

Total Time: 1 hr 15 mins Preparation Time: 40 mins Cook Time: 35 mins

Ingredients

  • Servings: 6
  • 6 boneless skinless chicken breast halves
  • 3 tablespoons paprika
  • salt and pepper
  • 2 tablespoons chopped shallots
  • 1/4 cup butter
  • 1 pint champagne
  • 1 1/2 pints heavy cream

Recipe

  • 1 sprinkle chicken breasts with paprika, salt and pepper.
  • 2 place chicken breasts in an ovenproof casserole.
  • 3 sprinkle with shallots, butter and champagne.
  • 4 cover dish and cook chicken at 350 degrees for about 25 minutes, until tender.
  • 5 place chicken on serving plate and keep warm.
  • 6 pour remaining champagne into a saucepan and cook on high until reduced by 2/3.
  • 7 reduce heat to medium, add heavy cream and reduce further until thickened.
  • 8 strain sauce and serve with chicken breasts.
