Breast Of Chicken Paprika In Champagne

Ingredients

- 6 boneless skinless chicken breast halves
- 3 tablespoons paprika
- salt and pepper
- 2 tablespoons chopped shallots
- 1/4 cup butter
- 1 pint champagne
- 1 1/2 pints heavy cream
Recipe
- 1 sprinkle chicken breasts with paprika, salt and pepper.
- 2 place chicken breasts in an ovenproof casserole.
- 3 sprinkle with shallots, butter and champagne.
- 4 cover dish and cook chicken at 350 degrees for about 25 minutes, until tender.
- 5 place chicken on serving plate and keep warm.
- 6 pour remaining champagne into a saucepan and cook on high until reduced by 2/3.
- 7 reduce heat to medium, add heavy cream and reduce further until thickened.
- 8 strain sauce and serve with chicken breasts.
