whole-grain pancakes

- 3/4 cup buttermilk
- 1/2 cup whole wheat flour
- 1/2 cup quick-cooking oats
- 1/4 cup amaranth
- 1 egg
- 2 tablespoons flax seeds
- 2 tablespoons chia seeds
- 2 tablespoons olive oil
- 1 tablespoon brown sugar
- 1 teaspoon baking powder
- 1 teaspoon vanilla extract
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 2 teaspoons vegetable oil, or as needed

- combine buttermilk, flour, oats, amaranth, egg, flax seeds, chia seeds, olive oil, brown sugar, baking powder, vanilla extract, baking soda, and salt in a food processor or blender; blend until smooth.
- heat vegetable oil on a griddle or skillet over high heat. pour batter, about 1/4 cup per pancake, the griddle and cook until form and the edges are dry, 3 to 4 minutes. flip and cook until browned on the other side, 2 to 3 minutes. repeat with remaining batter.
