Bess's Best Butter Beans

Total Time: 1 hr 5 mins Preparation Time: 5 mins Cook Time: 1 hr

Ingredients

  • Servings: 8
  • 2 tablespoons butter, melted
  • 1/2 cup low-fat yogurt or 1/2 cup sour cream
  • 1/2 cup brown sugar
  • 2 tablespoons molasses
  • 2 teaspoons dry mustard
  • 1 dash salt (to taste)
  • 4 (15 ounce) cans broad beans or 4 (15 ounce) cans butter beans, drained

Recipe

  • 1 preheat oven to 350 degrees.
  • 2 mix together all ingredients except beans, then combine with beans and pour into buttered 2 quart casserole.
  • 3 cover and bake 30 minutes. uncover and bake another 30 minutes, or until liquid begins to cook away but not until dry.
  • 4 note: this recipe was designed to feed a crowd. if you would like to cut it in half please reduce cooking time.
