Cauliflower Rye Casserole

Ingredients
- Servings: 4
- 1 cup beer
- 3 cups rye bread cubes
- 1 head cauliflower, cut into bite size pieces
- 2 tablespoons butter
- 1 teaspoon caraway seed
- 3 cups grated extra-sharp cheddar cheese
- 4 eggs
- 1 teaspoon dry mustard
- 1/2 teaspoon ground coriander
- fresh ground black pepper, to taste
Recipe
- 1 pour beer and let sit until completely flat.
- 2 dry bread cubes on a baking sheet in a 300f oven until browned, making sure they do not burn!
- 3 saute cauliflower in butter with the caraway seeds, until just tender. combine with bread and cheese and spread in a greased 2-quart casserole dish.
- 4 mix remaining ingredients with reserved beer in a blender and pour over casserole.
- 5 bake at 350f for 30-45 minutes, until browned and puffy.
