Cauliflower Rye Casserole

Ingredients

  • Servings: 4
  • 1 cup beer
  • 3 cups rye bread cubes
  • 1 head cauliflower, cut into bite size pieces
  • 2 tablespoons butter
  • 1 teaspoon caraway seed
  • 3 cups grated extra-sharp cheddar cheese
  • 4 eggs
  • 1 teaspoon dry mustard
  • 1/2 teaspoon ground coriander
  • fresh ground black pepper, to taste

Recipe

  • 1 pour beer and let sit until completely flat.
  • 2 dry bread cubes on a baking sheet in a 300f oven until browned, making sure they do not burn!
  • 3 saute cauliflower in butter with the caraway seeds, until just tender. combine with bread and cheese and spread in a greased 2-quart casserole dish.
  • 4 mix remaining ingredients with reserved beer in a blender and pour over casserole.
  • 5 bake at 350f for 30-45 minutes, until browned and puffy.
