Chicken Breasts Diane

Total Time: 30 mins Preparation Time: 20 mins Cook Time: 10 mins

Ingredients

  • Servings: 4
  • 4 boneless skinless chicken breast halves
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 tablespoon butter or 1 tablespoon margarine
  • 1 tablespoon olive oil
  • 4 green onions, chopped
  • 1/4 cup chicken broth
  • 2 tablespoons lemon juice
  • 2 tablespoons brandy
  • 2 tablespoons dijon mustard
  • 3 tablespoons chopped fresh parsley
  • hot cooked rice

Recipe

  • 1 place chicken between 2 sheets of heavy-duty plastic wrap; flatten to 1/4 inch thickness using a meat mallet or rolling pin.
  • 2 sprinkle with salt and pepper.
