Cheesy Bacon Puff

Ingredients
- Servings: 4
- 5 ounces plain flour (a small tumbler full)
- 9 fluid ounces milk (a small tumbler full)
- 3 large eggs, beaten
- 2 slices bacon, chopped very finely
- 1 pinch mustard powder
- 8 ounces mature medium cheddar, grated (a heaped tumbler full)
- 1 tomato, sliced into 6 slices. (for a tumbler use a medium child's glass)
Recipe
- 1 put a baking sheet in the oven and preheat to 200*c (425*f).
- 2 butter a round, shallow, ovenproof dish, about 8 inches in diameter.
- 3 in a large bowl beat the flour, milk, egs, bacon, mustard powder and about two thirds of the cheese with a generous pinch of salt and a good grinding of pepper, until everything's combined into a runny batter.
- 4 tip the batter into the prepared oven dish,lay the tomato slices on top (don't worry if they sink, they're supposed to) and scatter over the remaining cheese.
- 5 set the dish on the hot baking sheet and bake for 35 to 45 minutes until it has puffed up and is crispy and golden brown.
- 6 leave it to cool for a minute or two, but not too long or it will deflate.
- 7 serve the puff cut into wedges with a crunchy salad on the side.
