Chicken Breast Diane

Ingredients

- 4 large boneless chicken breasts (or 8 small)
- 1/2 teaspoon salt
- 1/4-1/2 teaspoon black pepper
- 2 tablespoons olive oil or 2 tablespoons salad oil
- 2 tablespoons butter or 2 tablespoons margarine
- 3 tablespoons fresh chives, chopped or 3 tablespoons green onions
- 1/2 limes, juice of or lemon
- 2 tablespoons brandy (optional) or 2 tablespoons cognac (optional)
- 3 tablespoons parsley, chopped
- 2 teaspoons dijon mustard
- 1/4 cup chicken broth
Recipe
- 1 place chicken breast halves bwtween sheets of waxed paper or plastic wrap and pound slightly with a mallet. sprinkle with salt and pepper.
- 2 heat 1 tablespoons each of oil and butter in large skillet.
- 3 cook chicken over high heat for 4 minutes per side. do not cook longer or they will be over cooked and dry. transfer to a warm serving platter.
- 4 add chives or green onion, lime juice, and brandy , if using, parsley and mustard to pan. cook 15 seconds. whisking constantly.
- 5 whisk in broth. stir until sauce is smooth whisk in remaining butter and oil.,.
- 6 pour sauce ofer chicken. serve immediatley.
