Chicken Breast Diane

Ingredients

  • Servings: 4
  • 4 large boneless chicken breasts (or 8 small)
  • 1/2 teaspoon salt
  • 1/4-1/2 teaspoon black pepper
  • 2 tablespoons olive oil or 2 tablespoons salad oil
  • 2 tablespoons butter or 2 tablespoons margarine
  • 3 tablespoons fresh chives, chopped or 3 tablespoons green onions
  • 1/2 limes, juice of or lemon
  • 2 tablespoons brandy (optional) or 2 tablespoons cognac (optional)
  • 3 tablespoons parsley, chopped
  • 2 teaspoons dijon mustard
  • 1/4 cup chicken broth

Recipe

  • 1 place chicken breast halves bwtween sheets of waxed paper or plastic wrap and pound slightly with a mallet. sprinkle with salt and pepper.
  • 2 heat 1 tablespoons each of oil and butter in large skillet.
  • 3 cook chicken over high heat for 4 minutes per side. do not cook longer or they will be over cooked and dry. transfer to a warm serving platter.
  • 4 add chives or green onion, lime juice, and brandy , if using, parsley and mustard to pan. cook 15 seconds. whisking constantly.
  • 5 whisk in broth. stir until sauce is smooth whisk in remaining butter and oil.,.
  • 6 pour sauce ofer chicken. serve immediatley.
