Banana Nut Bread

Ingredients
- 1 cup butter
- 2 cups sugar
- 2 cups bananas (overripe and mashed)
- 4 eggs
- 1 cup walnuts, chopped (optional)
- 2 teaspoons baking soda
- 1 teaspoon salt
- 2 cups flour (all-purpose)
Recipe
- 1 preheat oven to 350. grease and flour loaf pans (5 mini loaf pans or 2 9x5 loaf pans).
- 2 in large bowl melt butter.
- 3 stir in sugar until smooth.
- 4 stir in eggs, bananas and walnuts until well blended.
- 5 stir in baking soda, salt and flour.
- 6 bake at 350 for 60-70 minutes or until knife inserted into crown of loaf comes out clean.
- 7 let stand for 5 minutes and turn out on cooling rack.
- 8 cool completely and wrap in aluminum foil to keep in moisture.
