Banana Nut Bread

Total Time: 1 hr 20 mins Preparation Time: 20 mins Cook Time: 1 hr

Ingredients

  • 1 cup butter
  • 2 cups sugar
  • 2 cups bananas (overripe and mashed)
  • 4 eggs
  • 1 cup walnuts, chopped (optional)
  • 2 teaspoons baking soda
  • 1 teaspoon salt
  • 2 cups flour (all-purpose)

Recipe

  • 1 preheat oven to 350. grease and flour loaf pans (5 mini loaf pans or 2 9x5 loaf pans).
  • 2 in large bowl melt butter.
  • 3 stir in sugar until smooth.
  • 4 stir in eggs, bananas and walnuts until well blended.
  • 5 stir in baking soda, salt and flour.
  • 6 bake at 350 for 60-70 minutes or until knife inserted into crown of loaf comes out clean.
  • 7 let stand for 5 minutes and turn out on cooling rack.
  • 8 cool completely and wrap in aluminum foil to keep in moisture.
