Buttermilk Fantails

Total Time: 4 hrs 45 mins Preparation Time: 45 mins Cook Time: 4 hrs

Ingredients

  • 10 tablespoons butter
  • 2 teaspoons active dry yeast
  • 1/4 cup warm water
  • 1 tablespoon sugar
  • 3 cups all-purpose flour
  • 1 1/2 teaspoons salt
  • 3/4 cup well-shaken buttermilk
  • 2 teaspoons vegetable oil

Recipe

  • 1 stir together water, yeast, sugar. let sit 5 minutes (until foamy).
  • 2 mix flour, salt, buttermilk, and 6 tsp melted butter into yeast mixture.
  • 3 knead until elastic and smooth (6 to 8 minutes).
  • 4 oil top and bottom of dough and place in a large bowl and cover with plastic wrap.
  • 5 let rise until doubled (1.5 to 2 hours).
  • 6 punch dough down and cut in half.
  • 7 roll out 1/2 of dough to make a 12x12 square.
  • 8 cut square into 6 equal strips.
  • 9 butter the strips, then stack them on top of each other.
  • 10 cut stack into 6 equal parts.
  • 11 butter muffin pan and place rolls into muffin pan.
  • 12 repeat steps 8 through 13 for other half of dough.
  • 13 fan out tops of rolls.
  • 14 cover with towel and let rise for 1 to 1.5 hours.
  • 15 preheat oven to 375.
  • 16 back rolls until golden, 20 to 25 minutes.
  • 17 brush tops with melted butter before serving.
