Buttermilk Cornbread

Total Time: 30 mins Preparation Time: 10 mins Cook Time: 20 mins

Ingredients

  • Servings: 12
  • 2 eggs
  • 1 1/2 cups buttermilk
  • 1/2 cup vegetable oil
  • 1/2 cup applesauce
  • 1/3 cup honey
  • 2 teaspoons salt
  • 1 cup cornmeal
  • 2 1/2 cups flour (may use a combination of and wheat)
  • 4 teaspoons baking powder
  • 1 teaspoon baking soda

Recipe

  • 1 combine dry ingredients and set aside.
  • 2 mix eggs, buttermilk oil, applesauce, and honey.
  • 3 gently fold in dry ingredients, mix just until blended.
  • 4 batter will be lumpy.
  • 5 pour into greased 9x13 pan.
  • 6 bake at 400 degrees for about 20 minutes or until lightly browned.
  • 7 also makes 12 muffins, if desired.
