Buttermilk Cornbread

Ingredients
- Servings: 12
- 2 eggs
- 1 1/2 cups buttermilk
- 1/2 cup vegetable oil
- 1/2 cup applesauce
- 1/3 cup honey
- 2 teaspoons salt
- 1 cup cornmeal
- 2 1/2 cups flour (may use a combination of and wheat)
- 4 teaspoons baking powder
- 1 teaspoon baking soda
Recipe
- 1 combine dry ingredients and set aside.
- 2 mix eggs, buttermilk oil, applesauce, and honey.
- 3 gently fold in dry ingredients, mix just until blended.
- 4 batter will be lumpy.
- 5 pour into greased 9x13 pan.
- 6 bake at 400 degrees for about 20 minutes or until lightly browned.
- 7 also makes 12 muffins, if desired.
