Acorn Squash With Apple Stuffing

Total Time: 1 hr 17 mins Preparation Time: 15 mins Cook Time: 1 hr 2 mins

Ingredients

  • Servings: 2
  • 1 acorn squash
  • boiling water
  • 2 medium granny smith apples
  • 1/4 cup honey
  • 3 tablespoons of melted butter
  • salt

Recipe

  • 1 wash the squash, cut in half lengthwise,scoop out the seeds and fiber.
  • 2 put in a baking pan cut side down add an half inch of boiling water.
  • 3 bake at 400°f for 18-22 minutes.
  • 4 peel, core and dice apples.
  • 5 mix with honey and 2 tablespoons of the melted butter.
  • 6 turn squash cut side up and brush with the remaining butter.
  • 7 sprinkle with salt.
  • 8 fill cavity with apple mixture.
  • 9 cover pan with foil and continue to bake at 375°f 40 minutes or until the squash is tender.
