Cheesy Buns!

Ingredients
- 3 3/4 cups all-purpose flour
- 2 teaspoons salt
- 2 teaspoons active dry yeast
- 1 1/2 cups cold water
- 2/3 cup boiling water
- 2 1/2 teaspoons sugar
- 3 tablespoons butter
- 2 cups of shredded mozzarella cheese
- 1 cup cottage cheese
Recipe
- 1 mix sugar with boiling water until dissolved.
- 2 combine boiling and cold water in medium bowl.
- 3 sprinkle yeast on top.
- 4 mix flour and salt in large mixing bowl.
- 5 mix cheese into flour mixture thoroughly so it isn't to clumped up.
- 6 when yeast is all dissolved and foamy, stir then add to flour mixture.
- 7 mix until flour is all dissolved and sticky.
- 8 let rise some where warm for 1-2 hours.
- 9 punch down, and seperate into 24 even peices on a floured board.
- 10 butter two regular sized muffin tins liberally (there are typically 12 muffin spaces per tin).
- 11 drop the 24 pieces of dough into the muffin tins.
- 12 let rise somewhere warm for 30 minutes.
- 13 preheat oven to 425.
- 14 bake for 10 minutes, then turn down to 375.
- 15 bake another 10 - 15 minutes.
- 16 you can test by spearing one with a fork and taking it out to break open. cheese can be gooey, but dough fully baked.
