Buttermilk Cornbread

Ingredients
- 2 cups yellow cornmeal
- 1 cup all-purpose flour, sifted
- 6 tablespoons sugar
- 1 tablespoon baking powder
- 3/4 teaspoon salt
- 1/2 teaspoon baking soda
- 1/2 cup unsalted butter, chilled, cut into small pieces
- 1 1/2 cups buttermilk
- 1 teaspoon vanilla extract
- 3 large eggs
Recipe
- 1 preheat oven to 400°f.
- 2 butter bottom and sides of a 10 inch cast iron skillet or 9x9 inch baking pan.
- 3 mix first 6 ingredients in a food processor.
- 4 cut in butter until mixture resembles coarse meal.
- 5 beat buttermilk, vanilla and eggs in a large bowl.
- 6 add milk mixture to dry ingredients and process until just blended.
- 7 transfer to prepared pan.
- 8 bake about 30 minutes, until golden on top and tester comes out clean when inserted into center.
- 9 cool in pan on rack.
