Buttermilk Cornbread

Total Time: 45 mins Preparation Time: 15 mins Cook Time: 30 mins

Ingredients

  • 2 cups yellow cornmeal
  • 1 cup all-purpose flour, sifted
  • 6 tablespoons sugar
  • 1 tablespoon baking powder
  • 3/4 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1/2 cup unsalted butter, chilled, cut into small pieces
  • 1 1/2 cups buttermilk
  • 1 teaspoon vanilla extract
  • 3 large eggs

Recipe

  • 1 preheat oven to 400°f.
  • 2 butter bottom and sides of a 10 inch cast iron skillet or 9x9 inch baking pan.
  • 3 mix first 6 ingredients in a food processor.
  • 4 cut in butter until mixture resembles coarse meal.
  • 5 beat buttermilk, vanilla and eggs in a large bowl.
  • 6 add milk mixture to dry ingredients and process until just blended.
  • 7 transfer to prepared pan.
  • 8 bake about 30 minutes, until golden on top and tester comes out clean when inserted into center.
  • 9 cool in pan on rack.
