Banana Loaf

Ingredients
- 1 cup mashed ripe banana
- 1 cup granulated sugar
- 1/4 cup vegetable oil
- 1/2 cup sour cream
- 2 eggs, beaten
- 1 1/2 cups all-purpose flour
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1/2 teaspoon salt
Recipe
- 1 in larg mixing bowl, combine bananas, sugar, oil, sour cream and eggs; mix thoroughly. in separate bowl, mix together flour, baking powder, soda and salt; add to banana mixture, mixing just until combined.
- 2 pour into greased 9 x 5-inch (2 l) loaf pan. bake in 325 f (160 c) oven for 1 to 1-1/4 hours or until tester inserted in centre comes out clean. cool in pan 5 minutes before turning out onto rack to cool completely. slice and serve; butter if desired. makes 1 loaf.
