Amaretto Truffles

Total Time: 40 mins Preparation Time: 20 mins Cook Time: 20 mins

Ingredients

  • 4 tablespoons unsalted butter
  • 1/4 cup whipping cream
  • 4 tablespoons amaretto
  • 1 (12 ounce) package milk chocolate chips
  • pecans, ground

Recipe

  • 1 heat butter and cream in double boiler to a simmer(185-210 degrees).
  • 2 remove from heat and add 2 tablespoons amaretto and chips.
  • 3 return to heat and stir until chips are melted.
  • 4 add remaining amaretto.
  • 5 pour into small, deep mixing bowl and refrigerate 15 minutes.
  • 6 remove from refrigerator and beat on high with electric mixer until very thick and lighter in color.
  • 7 chill 60 minutes until firm.
  • 8 roll with hands into 1-inch balls.
  • 9 freeze until very firm (approximately 30 minutes).
  • 10 roll in ground pecans.
  • 11 store in refrigerator or freezer.
  • 12 if frozen, candy should be thawed in refrigerator 60 minutes before serving.
