Caramel Bananas

Total Time: 25 mins Preparation Time: 15 mins Cook Time: 10 mins

Ingredients

  • Servings: 4
  • 10 small bananas
  • 90 g butter
  • 1/4 cup firmly packed brown sugar
  • 1 tablespoon golden syrup
  • 1/3 cup sour cream
  • 1/3 cup whipping cream

Recipe

  • 1 peel the bananas and cut in half lengthways.
  • 2 heat 2/3rds of the butter in a large non stick frying pan.
  • 3 when foaming, add the banana halves.
  • 4 cook over medium heat for about 2 minutes each side.
  • 5 transfer to a plate and keep warm.
  • 6 add the remaining butter to the pan with the sugar, syrup and sour cream.
  • 7 whisk over low heat until until the sugar dissolves.
  • 8 simmer 1 minute.
  • 9 whisk in cream and simmer for a further minute.
  • 10 return bananas to the pan and simmer gently for 2-3 minutes.
  • 11 serve immediately with vanilla ice cream and a dollop of whipped cream.
