Berry Cobbler

Ingredients

- 1/3 cup sugar
- 3 tablespoons butter, room temperature
- 3/4 cup milk
- 1 1/2 cups flour
- 3 teaspoons baking powder
- 1/2 teaspoon salt
- 4 cups frozen berries (if using fresh, reduce baking time by 5 minutes)
- 1/2 cup sugar (more, if using tart berries)
- 1 1/2 cups boiling water
- 1/4 teaspoon liquid stevia
Recipe
- 1 cream together butter and 1/3 cup sugar.
- 2 add milk, flour, baking powder, and salt. stir until mixed, about 30 seconds. batter will be thick and slightly lumpy.
- 3 spread batter evenly in the bottom of an ungreased 9 x 13 x 2 inch pan.
- 4 top with frozen (or fresh) berries.
- 5 sprinkle with 1/2 cup sugar. if not using stevia, increase sugar to 1 cup or to taste.
- 6 pour boiling water over berries, dissolving sugar.
- 7 dribble stevia extract into water.
- 8 bake at 425 degrees f for 35 minutes, until biscuit topping is firm and golden brown. if using fresh berries, bake for 30 minutes.
