Bishop's Bread

Total Time: 1 hr 10 mins Preparation Time: 30 mins Cook Time: 40 mins

Ingredients

  • 2 ounces butter
  • 2 eggs
  • 1/2 cup milk, lukewarm
  • 4 ounces sugar
  • 5 ounces self rising flour
  • 1 cup mixed fruit

Recipe

  • 1 cream butter, sugar and egg yolks.
  • 2 add flour and milk gradually, alternating the wet and dry.
  • 3 add chopped and mixed fruit.
  • 4 fold in the stiffly beaten egg whites.
  • 5 grease and flour a ribmould tin.
  • 6 fill with mixture.
  • 7 bake for 30 minutes at 350 f.
  • 8 turn the oven off and leave in for another 10 minutes.
  • 9 when cool, dust with icing sugar.
