Banana Cream Pie

Total Time: 3 hrs 30 mins Preparation Time: 30 mins Cook Time: 3 hrs

Ingredients

  • 2 -3 bananas
  • 3/4 cup sugar
  • 1/4 cup cornstarch
  • 1/4 teaspoon salt
  • 3 cups milk
  • 3 egg yolks
  • 2 tablespoons butter
  • 2 teaspoons vanilla
  • 1 cup cream
  • 1 prebaked pie shell

Recipe

  • 1 slice bananas and sprinkle lightly with lemon juice.
  • 2 to make custard: in saucepan, stir sugar, cornstarch and salt.
  • 3 add milk and whisk until smooth.
  • 4 turn on heat to medium.
  • 5 stir constantly until mixture boils.
  • 6 let boil 2 minutes, remove from heat.
  • 7 mix 1/8 cup of hot milk mixture into egg yolks.
  • 8 add another 1/8 cup of mixture.
  • 9 add yolk mixture to hot milk mixture in pot and return to heat.
  • 10 mix well until custard bubbles, stirring constantly.
  • 11 remove from heat and add butter and vanilla.
  • 12 smear 2-3 tbsp custard over bottom of pie shell.
  • 13 layer sliced bananas over bottom and top with custard.
  • 14 refrigerate 3 hours and top with whipped cream.
