Bibingka

Ingredients

  • Servings: 12
  • 3 cups cassava, grated
  • 2 eggs
  • 1 1/2 cups equal sugar substitute
  • 3/4 tablespoon iodized salt
  • 1 1/2 tablespoons butter
  • 1 1/2 cups coconut milk
  • 439 g pineapple
  • 1/3 cup coconut milk

Recipe

  • 1 squeeze liquid from grated cassava. set aside. beat eggs. add sugar, salt and butter. mix well. stir in coconut milk, grated cassava and pineapple. pour into a greased 8" x 8" square pan.
  • 2 bake in a preheated oven at 350of for 55 minutes, or until light brown in color. pour pure coconut milk on top. bake for another 5 minutes, or until top becomes golden brown.
