Cheesy Biscuit Bean 'n Beef Casserole

Total Time: 50 mins Preparation Time: 30 mins Cook Time: 20 mins

Ingredients

  • Servings: 6
  • 1 (10 1/4 ounce) can refrigerated buttermilk biscuits (pillsbury grands homestyle)
  • 1/2 lb lean ground beef (at least 80%)
  • 1 medium onion, chopped (1/2 cup)
  • 1 (28 ounce) can baked beans with bacon and brown sugar, undrained
  • 1 (15 ounce) can kidney beans, drained and rinsed
  • 1 (15 7/8 ounce) can great northern beans, drained and rinsed
  • 1/2 cup barbecue sauce
  • 1/2 cup finely shredded cheddar cheese (2 oz.)

Recipe

  • 1 preheat oven to 350°; spray an 11 x 7 inch glass baking dish with cooking spray.
  • 2 separate biscuits; cut each biscuit into 6 pieces; set aside.
  • 3 in a large nonstick skillet, cook beef and onion over med-high heat 5-7 minutes, stirring occasionally, until beef is thoroughly cooked; drain.
  • 4 stir in beans and barbecue sauce; heat to boiling, stirring occasionally.
  • 5 pour hot mixture into baking dish; immediately top with biscuit pieces; sprinkle with cheese.
  • 6 bake 18-20 minutes or until biscuits are golden brown and baked through.
