Chicken Breast With Peach Stuffing

Ingredients

- 2 large boneless skinless chicken breasts (about 8 ounces each)
- 2 tablespoons vegetable oil
- 1 cup peach nectar
- 1 1/2 tablespoons unsalted butter
- 1 tablespoon brown sugar, packed
- 1 tablespoon cider vinegar
- 1 dash ground allspice
- 2 cups reduced-sodium chicken flavor stuffing mix
- 1 large peach, ripe, chopped
Recipe
- 1 in a skillet, brown the chicken breasts on both sides in the oil.
- 2 gradually stir in the peach nectar, along with the butter, brown sugar, vinegar & allspice.
- 3 bring to a boil, then reduce the heat to simmer, cover & cook for another 5 minutes or until chicken juices run clear.
- 4 stir in the stuffing mix & the chopped peach, then cover & remove from the heat.
- 5 let the covered skillet stand for 5 minutes or until the liquid is absorbed, then serve & enjoy!.
