Chicken Breast With Peach Stuffing

Total Time: 25 mins Preparation Time: 10 mins Cook Time: 15 mins

Ingredients

  • Servings: 2
  • 2 large boneless skinless chicken breasts (about 8 ounces each)
  • 2 tablespoons vegetable oil
  • 1 cup peach nectar
  • 1 1/2 tablespoons unsalted butter
  • 1 tablespoon brown sugar, packed
  • 1 tablespoon cider vinegar
  • 1 dash ground allspice
  • 2 cups reduced-sodium chicken flavor stuffing mix
  • 1 large peach, ripe, chopped

Recipe

  • 1 in a skillet, brown the chicken breasts on both sides in the oil.
  • 2 gradually stir in the peach nectar, along with the butter, brown sugar, vinegar & allspice.
  • 3 bring to a boil, then reduce the heat to simmer, cover & cook for another 5 minutes or until chicken juices run clear.
  • 4 stir in the stuffing mix & the chopped peach, then cover & remove from the heat.
  • 5 let the covered skillet stand for 5 minutes or until the liquid is absorbed, then serve & enjoy!.
