Blueberry Cream Cheese Pie

Ingredients

- 1 (9 inch) baked pastry shells
- 2 cups blueberries, plus
- 2 1/2 cups blueberries
- 1 cup sugar
- 3 tablespoons cornstarch
- 1/2 cup water
- 1 teaspoon butter
- 1 teaspoon lemon juice
- 1 cup cream cheese, softened
- 2 cups whipped cream (optional)
Recipe
- 1 spread softened cream cheese unto bottom of pie shell.
- 2 mix cornstarch with water and stir until dissolved.
- 3 combine 2 cups of berries, cornstarch liquid, sugar, butter and lemon juice in a medium saucepan.
- 4 slowly bring to a boil, stirring constantly.
- 5 let boil for one minute stirring constantly.
- 6 let cool slightly.
- 7 pour into pie shell and let cool.
- 8 top with more fresh berries.
- 9 serve with whipped cream.
