Blueberry Cream Cheese Pie

Total Time: 15 mins Preparation Time: 5 mins Cook Time: 10 mins

Ingredients

  • Servings: 8
  • 1 (9 inch) baked pastry shells
  • 2 cups blueberries, plus
  • 2 1/2 cups blueberries
  • 1 cup sugar
  • 3 tablespoons cornstarch
  • 1/2 cup water
  • 1 teaspoon butter
  • 1 teaspoon lemon juice
  • 1 cup cream cheese, softened
  • 2 cups whipped cream (optional)

Recipe

  • 1 spread softened cream cheese unto bottom of pie shell.
  • 2 mix cornstarch with water and stir until dissolved.
  • 3 combine 2 cups of berries, cornstarch liquid, sugar, butter and lemon juice in a medium saucepan.
  • 4 slowly bring to a boil, stirring constantly.
  • 5 let boil for one minute stirring constantly.
  • 6 let cool slightly.
  • 7 pour into pie shell and let cool.
  • 8 top with more fresh berries.
  • 9 serve with whipped cream.
