Ingredients
- 1 zucchini
- 1 cup butternut squash
- 1/4 cup quinoa
- 1 cup water
- 1/2 tomato
- 2 medium carrots
- olive oil (optional, but good choice if extra calories are needed)
Recipe
- 1 steam or boil the zucchini, squash and carrots until tender enough to puree. rinse quinoa (or soak for a few minutes) add water to a pot, add the quinoa and bring to a boil and simmer until quinoa has begun to unravel itself. puree together the zucchini, squash, tomato and carrots and add the cooked quinoa.
