Cauliflower Agrodolce

Total Time: 40 mins Preparation Time: 20 mins Cook Time: 20 mins

Ingredients

  • 1 lb cauliflower, separated into florets
  • 1 cup raisins
  • 1/2 cup sherry wine vinegar
  • 3 1/2 anchovies, drained
  • 3 1/2 tablespoons capers, drained
  • 1/2 cup butter
  • 1/4 cup flat leaf parsley

Recipe

  • 1 blanch cauliflower for 5 to 7 minutes.
  • 2 drain and set aside.
  • 3 simmer raisins and vinegar over medium heat for 20 to 25 minutes.
  • 4 rinse anchovies and capers
  • 5 transfer to bowel of a food processor.
  • 6 add the raisins and any liquid in the pan and process until the ingredients form a paste.
  • 7 in a large oven proof pan, melt the butter over medium heat.
  • 8 add the cauliflower and cook for 4 to 5 minutes.
  • 9 preheat the broiler.
  • 10 spoon anchovy paste over cauliflower
  • 11 broil for about 4 minutes or until golden brown.
  • 12 garnish with parsley and bread crumbs.
