Cauliflower Agrodolce

Ingredients
- 1 lb cauliflower, separated into florets
- 1 cup raisins
- 1/2 cup sherry wine vinegar
- 3 1/2 anchovies, drained
- 3 1/2 tablespoons capers, drained
- 1/2 cup butter
- 1/4 cup flat leaf parsley
Recipe
- 1 blanch cauliflower for 5 to 7 minutes.
- 2 drain and set aside.
- 3 simmer raisins and vinegar over medium heat for 20 to 25 minutes.
- 4 rinse anchovies and capers
- 5 transfer to bowel of a food processor.
- 6 add the raisins and any liquid in the pan and process until the ingredients form a paste.
- 7 in a large oven proof pan, melt the butter over medium heat.
- 8 add the cauliflower and cook for 4 to 5 minutes.
- 9 preheat the broiler.
- 10 spoon anchovy paste over cauliflower
- 11 broil for about 4 minutes or until golden brown.
- 12 garnish with parsley and bread crumbs.
